One pan dinner roast (maple Dijon chicken with roasted veggies)
Preheat Oven to 375 degrees
Feeds: 2 people
1 lb of baby Dutch potatoes (cut them in quarters)
3-4 carrots (can also use butternut squash, sweet potatoes, acorn squash)
1 stalk of broccoli
2 chicken breast
3 cloves of minced garlic
For the Vegetables
-2 tablespoons of maple syrup
-1 tablespoon of dijion mustard
Drizzle of olive oil
Salt and pepper to taste
1 tsp of garlic powder (or more, you can adjust to your liking)
1 tsp of onion powder
1 tsp of smoked paprika
1/2 tsp of dried thyme
- half the minced garlic
For the Chicken
-1 Tablespoon of maple syrup
1/2 Tablespoon of dijion mustard
-drizzle of olive oil
-salt and pepper to taste
1 tsp of garlic powder
1 tsp of smoked paprika
1/2 tsp of dried thyme
Rest of the minced garlic
Directions
Have the oven preheated to 375 degrees. Get sheet tray ready with parchment paper
For the vegetables throw everything in the bowl, mix together well, and evenly scatter on the sheet tray
For the chicken, cut chicken breasts in half, put everything for the chicken in the bowl and mix well. Place on sheet tray with vegetables
Place in oven at 375 degrees for 25-30 mins (depending on the thickness of your chicken) then serve and enjoy!
